Hello Friends!
I promised you all my Salmon Patties recipe, so I am delivering on that. It is a loaded version as I have added some ingredients that will increase the healthy fat and protein content, including chia and hemp seeds, avocado and almond and coconut flour. Here it is:
Avocado-Caper Salmon Patties
Ingredients:
3 6-oz cans of Wild Alaskan Pink Salmon, drained from liquid (or 18-20oz cooked or grilled salmon)
1 organic, pastured egg
Juice of 1 lemon
1/2 avocado
1 Tablespoon chia seeds
1 Tablespoon hemp seeds
1 Tablespoon capers
1 Tablespoon coconut flour (or 2 Tablespoons if not using almond flour)
2 Tablespoons almond flour (or 1/4C if not using coconut flour)
1/4 teaspoon sea salt
1 teaspoon garlic powder or 2 cloves fresh minced garlic
1/2 tablespoon dried parsley
Optional: crushed gluten-free corn chips for coating patties
Lemon-Caper-Butter Sauce Ingredients:
3 Tablespoons organic, grass-fed butter, salted
2 Tablespoons fresh lemon juice
1-2 Tablespoons capers, mushed
Preparation:
1) In a food processor, puree avocado and lemon juice
2) In a large mixing bowl, mix all ingredients, adding the pureed avocado and lemon juice
3) Form patties by hand
4) In a cast iron skillet, heat 2 Tablespoons of butter or coconut oil in medium heat
5) Place patties in skillet and cook on one side without moving or flipping for about 5-6 minutes, until golden brown. Carefully flip each patty and cook on other side until golden brown.
6) Serve with lemon-caper-butter sauce (just melt butter and add lemon juice and mushed capers) and your choice of vegetables. Also great as a salad topping!
