Cook Once, Eat Twice: Effortless Meatloaf + Fried Eggs & Meatloaf Breakfast {GF, DF, Grain-free}

EFFORTLESS MEATLOAF (GF, DF, GRAIN-FREE)

Ingredients:

1 lb pasture raised pork breakfast sausage OR plain ground pork

1 organic pastured egg

1/4 cup almond flour

Optional:

1/4 yellow onion, finely diced

If using plain pork and beef, seasoning to taste: sea salt, pepper, parsley, garlic, paprika, fennel, red pepper, oregano, marjoram, rosemary, thyme, sage

Preparation:

  1. Preheat oven at 350F.

  2. In a large mixing bowl, mix well the ground beef, pork, egg and almond flour.

  3. Mold into a 9" x 5" glass loaf baking dish and place in oven (middle rack).

  4. Bake for 350-45 min, until juices run clear.

  5. Remove from oven and let sit 5-10 min before slicing and serving

EFFORTLESS MASHED POTATOES (GF, GRAIN FREE, EGG FREE)


Ingredients:

1 lb organic yellow potatoes, unpeeled

1 stick organic grass-fed salted butter

sea salt and pepper to taste

Optional: grass-fed organic raw milk


Preparation:

  1. Rinse the potatoes and add to a large pot filled with water to cover (no need to peel or cut).

  2. Cover with lid and boil potatoes until soft.

  3. Drain potatoes, put back into pot and mash using a potato masher.

  4. Add butter by the 1/4-inch slice and wait until melts. Then mix with a wooden spatula.

  5. Add water or milk to reach desired consistency and mix/whip vigorously until creamy (do not sue a hand mixer, get your arm workout instead!).

  6. Season with salt and pepper to taste.

EFFORTLESS GREEN SIDE SALAD


Ingredients:

Any type of organic salad greens, rinsed

Organic balsamic reduction


Preparation:

  1. Place salad greens in bowl and drizzle with reduction!

And as far as leftovers? Turn them into an amazing breakfast the next morning!


LEFTOVER FRIED MEATLOAF AND EGGS BREAKFAST


Ingredients:

1-2 slices of leftover meatloaf

2-4 eggs

2 TBSP organic grass-fed salted butter

Optional: diced onions, red peppers and spinach


Preparation:

  1. In a cast iron or nonstick skillet, melt butter on medium heat.

  2. (Ff using vegetables, add them to skillet and sauté until soft).

  3. Add meatloaf and break up to crumbs with wooden spatula. Brown until it begins to crisp.

  4. Crack eggs on top (or pour scrambled eggs on top) and cook to desired consistency, stirring as needed.

  5. Remove from heat, salt and pepper to taste and serve with additional veggies, buttered toast or your choice of side.
